Delicious Creamy Cajun Alfredo is so quick and easy to throw together on a busy week night for a healthy and filling but tasty meal.

My favorite thing about this meal is how easy it is to quickly throw together in such a short time.
Tonight was one of those days where pregnancy just took it all out of me. Aches and pains all over my body and a touch of nausea has me just wanting to lay around and binge watch my favorite YouTubers.
Alas, I want my family to eat a healthy dinner and im responsible for their nourishment. Could we do fast food? Yes, and we do all too often right now.
However, I find that poor eating only compounds my pregnancy woes and I typically feel guilty with the cost verses the quality of what my family is eating.
This meal met all my requirements. I needed something mostly healthy, fast, easy and sure to please my sometimes picky eaters. Ding, Ding, Ding!!!

Tools I used for this recipe
Wooden Spoon– if you are using cast iron, I find that wooden utensils are the best option. They are gentle enough on the pans seasoning while being sturdy enough to scrape up stuck on bits from the bottom.
Cast Iron Skillet This enameled cast iron looks really similar to mine but has the added bonus of a lid.
Sharp Knife

Ingredients for Creamy Cajun Alfredo Pasta
Penne Pasta- I love how those little ridges on the outside of the penne pasta grab onto the sauce while simultaniously filling with sauce on the inside.
Smoked Sausage- We love smoked sausage in pasta recipes and is how I got my husband to acquire a taste for Alfredo sauce.
Red Bell Pepper
Frozen Chopped Kale- You can use fresh, of course. You just need to saute it first because it tends to take a while to soften.
Cream Cheese- adds creaminess and helps the parmesan cheese mix with the sauce.
Half and Half- I like that half and half is thicker than milk but not as thick as heavy cream. It’s a good in between for this sauce. Milk can certainly be substituted though.
Parmesean- Fresh grated or pre-grated, just not the powdery stuff in the plastic container.
Cajun Seasoning- I used a homemade version that has no salt and no real heat to it. Our youngsters will turn their noses up at it if it’s too spicy. Most commercially produced Cajun seasonings are loaded with salt too.
Garlic- I used powder for ease, however, fresh would be better.

Instructions for Creamy Cajun Alfredo Pasta
Begin by heating your cast iron skillet over medium heat.
First, core and deseed your red bell pepper. Cut it in half and then in 1/4 inch strips. Cut those strips into 1 inch pieces.
Add the pepper to the skillet and saute.
Next, slice your smoked sausage in half lengthwise and then slice them in 1/4 in slices. Add the sausage to the pan.

Saute your peppers and sausage for 5 minutes, or until evenly browned and peppers are still slightly crispy.
After they sausage and peppers have browned, add your frozen Kale to the pan. Saute the kale just until it is cooked through and wilted.
Add cream cheese to the the pan and break it apart. As it heats it will disperse.

Now add the half and half. Stir to combine.

Stir the Parmesan Cheese, Cajun Seasoning, Garlic Powder,Salt and Pepper in to combine. Allow the Creamy Cajun Alfredo to cook for 3 to 5 minutes.

I serve this with a slice of my Easy No Knead Sourdough Artisan Bread

- 1 lb Penne Pasta
- 1lb Smoked Sausage, sliced
- 1 Red Bell Pepper, sliced and cut into 1" pieces
- 5 oz Frozen Chopped Kale
- 4 oz Cream Cheese
- 1/2 cup Half and Half, more if needed to thin sauce
- 1/2 cup Parmesan Cheese
- 2 tsp Cajun Seasoning
- 1 tsp Garlic
- 1/2 tsp Salt
- 1/4 tsp Pepper
